Chocolate Chip Pumpkin Cookie Recipe

Big batch, can be split in 1/2:

2 cups canned pumpkin

2 cups sugar

1 cup vegetable oil

2 eggs

4 cups all purpose flour

4tsp baking powder

4tbsp pumpkin pie spice (cinnamon if that’s all you have)

1tsp salt

2tsp baking soda

1 tbsp milk

3 tbsp vanilla

3-4 cups chocolate chips (milk or semi sweet- I prefer semi sweet) depending on how chocolate-y you like them!

Mix pumpkin, egg, oil, and sugar together.

Stir in other dry ingredients together.

Splash in milk and vanilla. Fold chocolate chips in

On a greased sheet, add spoonfuls of batter and bake @ 350 for ten minutes. Cookies should be light brown, firm but soft inside.
